Intense lemongrass, limes and lemons with subtle floral notes.
Beautifully balanced palate with perfect acidity providing cut and drive. Wonderfully intense citrus fruit flavours with excellent persistence.
Hand picked in the early morning to ensure the fruit was cool, destemmed to press where only 500 Litres per tonne of the finest free run was taken. Settled, racked and inoculated for a clean & cold fermentation which took 14 days. Chilled and fined before bottling.
Will cellar for up to 35 years
