Intense citrus and lemongrass combine with bottle age characters of lanolin and toast.
Very dry conditions during the growing season resulted in lower yields, but good quality wines. A rain event in December helped, however record temperatures during early January gave way to a downpour on Australia Day, by which time some excellent Semillons and Chardonnay were already in the winery displaying a good concentration of aromatics and flavour, with a nice acid line. Warm weather returned and excellent Shiraz was made from this vintage.
Concentrated fruits of lemon and lime, beautiful acidity driving through the palate showcasing the amazing length of this wonderful aged styles.
Once at the winery the Semillon was destemmed and pressed off skins to stainless steel tank. Here the juice was cold settled bright before being racked off, warmed and inoculated for fermentation. The juice was fermented with a specific neutral yeast strain chosen to promote the vineyard specific flavours, and fermentation was conducted at cold temperatures to retain the delicate flavours. Following fermentation, the wines were settled, blended and gently fined before being filtered to bottle.

Released after 5 years, and will reward long term cellaring.
